Ingredients
For the Cake:
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
For the Cinnamon Swirl:
- 1/3 cup brown sugar
- 1 1/2 tsp ground cinnamon
For the Streusel Topping:
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1 tsp cinnamon
- 1/4 cup unsalted butter, melted
Instructions
Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C). Grease and flour a 9×9 inch baking dish or line it with parchment paper.
Step 2: Make the Batter
In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla and sour cream.
In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients and mix just until combined.
Step 3: Layer the Cake
Spread half the batter into the prepared pan. In a small bowl, combine brown sugar and cinnamon for the swirl, then sprinkle it evenly over the batter. Add the remaining batter on top and spread it out gently.
Step 4: Add the Streusel
Mix all streusel topping ingredients in a bowl until crumbly. Sprinkle generously over the top of the cake.
Step 5: Bake
Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 15 minutes before slicing and serving.
