  • 4 cups powdered sugar
  • 3–4 tbsp champagne, to taste
  • ½ tsp vanilla extract
  • Pinch of salt
  • Optional: A drop of pink gel food coloring

  • Fresh strawberries
  • Edible gold leaf or sprinkles

🍰 Instructions

1. Preheat & Prep

Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.

2. Mix the Batter

In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, beat the butter and sugar until light and fluffy. Add egg whites one at a time, beating well after each. Stir in vanilla and strawberry puree.

3. Add the Bubbles

Slowly mix in the dry ingredients and champagne, alternating between the two in batches. Add food coloring if desired. Mix until just combined—don’t overmix.

4. Bake

Divide batter evenly into pans and bake for 25–28 minutes or until a toothpick comes out clean. Cool completely before frosting.

5. Make the Buttercream

Beat butter until creamy. Gradually add powdered sugar, then champagne and vanilla. Beat until smooth and fluffy. Add food coloring for a soft pink hue.

6. Assemble & Frost

Layer cakes with buttercream in between. Apply a crumb coat and chill for 15 minutes. Frost the exterior with the remaining buttercream. Garnish with strawberries and gold accents.
